It is on the banks of the Loire in Rivarennes that the verges of the Herin house take advantage of the mild climate of Touraine to give beautiful tasty fruits. Using an ancestral method, the Herin house produces typed pears. The harvested pears are sorted, gently dried and then flattened.

Tapped pears can be eaten as they are and are also a popular ingredient in the cuisine of great chefs and good tables. You can rehydrate them cold all night in the liquid of your choice (wine, tea, cider, beer) anything but water (the water was removed in the oven!)
